The perfect cookie for the holidays these Cadbury Christmas cookies use festive red, green and white mini eggs and chocolate chips.
Every year I go to a holiday cookie swap and I love to make festive cookies to bring. Cadbury Mini Eggs are one of my all time favorite candies, and I’m happy that you are now able to get them year round. This year I’ve decided to change up one of my favorite cookie recipes – my Easter Cadbury Mini Egg Cookie. Using the Cadbury Christmas Mini Snowballs (holiday themed mini eggs in red, green and white) I was able to make them for Christmas as the perfect holiday treat to bring and share with friends and family.
Cadbury Christmas Cookies Ingredients
- Unsalted Butter – using unsalted butter in baking helps you control the amount of salt that goes into your recipe
- Sugar – this recipe uses both graduated white and light brown sugar. I use brown sugar in this recipe, but in a pinch white sugar would work as well
- Eggs
- Vanilla Extract – if using imitation vanilla extract I like to add in a little more to make up for the flavor
- Flour– All purpose flour.
- Salt – I typically use kosher salt, but sea salt also works great in baking
- Baking Soda – used to increase the volume and create a lighter texture in baked goods
- Cadbury Mini Eggs – holiday themed ones are also called Cadbury Christmas Mini Snowballs
- Chocolate Chips – I like to use semisweet to balance the milk chocolate of the Cadbury Mini Eggs
How to Make Cadbury Christmas Cookies
Preheat your oven to 350º F. In a medium sized bowl or a stand mixer cream together butter, sugar and brown sugar. Incorporate vanilla and egg mix for about 15 seconds until just combined. Make sure you don’t over mix.
In a separate bowl, sift together the flour, salt and baking soda. Next gradually mix dry ingredients into wet ingredients until combined. Add in Cadbury Snow Balls (mini eggs) and chocolate chips.
Roll dough into balls and place 2 inches apart on a greased or lined cookie sheet. Bake for 10-12 minutes. You just want them to get golden with the edges slightly brown. Make sure you don’t over bake! Cool on a baking rack and make sure to save some for Santa!
